    Creamy Tahini Lime Slaw

    This creamy lime tahini slaw will challenge your idea of ordinary coleslaw. You still get the red and green cabbage, but now they're paired with tons of crunchy vegetables, like cucumber, tomato, and bell pepper, all coated in a creamy lime tahini dressing. So simple, so satisfying, and so colorful! Best of all, it can hang out in the fridge for up to 3 days, making meal prep a breeze.

    Is this creamy tahini lime slaw a meal or a side? With crunchy cabbage, hearty chickpeas, creamy avocado and toasted pepitas, it's absolutely filling enough for a main dish. I could eat the whole bowl! Or, serve it as a standout side dish at summer barbecues, cookouts, and parties.

    It's delightfully different, packed with textures and bold flavors, plus the dressing is creamy without a drop of dairy!

    This slaw is dressed simply with sesame tahini, lime juice and salt, then finished with a handful of mint for freshness. It's sure to be a new favorite.

    The most important ingredient in this tahini slaw recipe

    What makes this dairy and oil-free slaw so creamy? My favorite ingredient: tahini!

    Tahini is a paste made by grinding sesame seeds and it is used in many Middle Eastern and Mediterranean recipes. 

    I have tried many brands of tahini over the years but my favorite tahini brand is hands-down Mighty Sesame Tahini. I use it exclusively now, and this creamy tahini lime slaw recipe was developed with sponsorship from the brand.

    Why I Love Mighty Sesame Tahini

    • Always runny and pourable. Other brands separate, leaving the sesame paste hard and unusable. This never happens with Mighty Sesame. It's smooth and drizzling every time! 
    • Perfectly sized. The squeeze bottle makes it easy to squeeze out just enough without getting a mess all over your fridge or counter. Use the last few drops by simply storing the bottle upside down. This leaves minimal waste.
    • Affordable. Honestly, the price point is right on. With other brands, half of the container is often unusable due to caking factor. Because tahini prices vary wildly per ounce Mighty Sesame is always the best buy since there is no waste
    • Single ingredient. Mighty Sesame is Vegan, Organic and only contains 1 ingredient. JUST ONE! I love that there is nothing extra in there.

    Ingredients for Tahini Lime Slaw

    • Canned chickpeas - These are a great source of vegan protein and make this slaw eat more like a main dish than a side salad.
    • Green cabbage - I love mixing both red and green cabbage for two different colors and lots of crunch. I recommend cutting it by hand for extra texture. 
    • Red cabbage
    • Cherry tomatoes - These are sweet and tart and add a nice flavor with all the other fresh ingredients. 
    • Persian cucumbers - These are tender, seedless cucumbers, similar to mini English cucumbers. Perfect for salads. 
    • Red onion - For a sharp bite and a little heat. 
    • Avocado - Creamy avocado helps cool down the chili lime seasoning. Add it just before serving to keep it nice and green. 
    • Baby bell peppers - For extra bite and an earthy sweetness. 
    • Fresh mint leaves - I love adding fresh herbs to salads and mint is especially refreshing. It's the perfect way to balance out the savory elements. Fresh parsley can work in a pinch, too.
    • Toasted pepitas - Adds extra crunch and a nutty bite.
    • Tahini - For the dressing, combine the tahini with salt, pepper, and fresh lime juice. You can make a lemon tahini dressing if you prefer, but I love the brightness of lime.
    • Chili and Lime seasoning (optional)

    Bonus tip: Remember to slice the avocado when serving so it does not brown.

    How to Make Creamy Tahini Lime Slaw

    This slaw style salad is so easy to make. It involves zero actual cooking. Just chop the veggies and mix! To make it even easier, buy the cabbages pre-shredded.

    • Combine cabbage, chickpeas, tomatoes, cucumbers, onion, bell peppers, mint and pepitas to a large bowl.
    • Add tahini, salt, pepper and lime.
    • Mix with hands until well combined. Taste for salt and adjust to your tastes.
    • Garnish with sliced avocado, mint leaves and chili and lime seasoning.

    Tips for Making the Best Vegan Coleslaw Recipe

    • Season to taste. We're all different. Prefer saltier flavors? Add an extra pinch or two of sea salt. For a sweeter slaw, add a drizzle of maple syrup. Stir in some fresh lime zest for more of a citrus note. 
    • Cut the cabbage by hand. I often use that bagged coleslaw mix to save some effort, but the cabbage is sliced almost too thinly. For this slaw in particular, I like to cut each head of cabbage by hand for thicker pieces with more texture.
    • Let it set. As the slaw sits, the creamy dressing and veggies start to come together. The flavor is best after about an hour, although you don't have to wait if you don't want.
    • Add more veggies. Slaws are pretty forgiving and can be expanded depending on what else you have on hand. This slaw would be great with more chopped veggies, like sweet snap peas, matchstick carrots, red onion, and more. Feel free to add more herbs, too, like green onion, parsley, etc.

    Is tahini coleslaw good for you?

    This creamy slaw salad is very nutritious. I chose chickpeas as a protein to add to this Creamy Tahini Lime Slaw. Chickpeas are so versatile. They bring protein and fiber to the party and make the slaw more filling. The chickpeas' flavor is so mild, and the dressing really makes them pop. Then I added more protein and healthy fats with pepitas and avocado. These ingredients help to make the slaw's nutritional profile top notch.

    Can you eat coleslaw as a complete meal?

    Well, traditional coleslaw recipes are tossed with a typical mayo-based dressing, which adds tons of calories. It's also low in protein and won't really fill you up. But, this tahini slaw recipe is more balanced. You get the shredded cabbage, but with lots of veggies to fill you up. The chickpeas and tahini will add some protein, too. It makes an easy no-cook main course during the hot summer months, although you can treat it like a side dish if you prefer.

    How do you store leftover tahini slaw?

    Store any leftover cabbage tahini coleslaw in an airtight container in the fridge for up to 3 days, but it's best within the first 1-2 days. Stir well before serving and serve cold.

    • 1 can chickpeas drained
    • 2 cups shredded green cabbage
    • 1 cup shredded red cabbage
