    These vegan tahini chocolate cookies are exceptional. They are a moist and fluffy cookie that is not greasy or overly sweet. The addition of oats makes them chewy and swapping sesame tahini for butter makes them slightly nutty and so flavorful. If you love chocolate chip cookies, but hate the guilt, you need to try this healthier plant-based version.     There is so much to love about these tahini chocolate chip cookies. First of all they are completely vegan, dairy-free and egg free. I have always loved chocolate cookies but I didn't like the bellyache I got from eating so much butter. It's so hard to eat just one! With these vegan cookies, we have replaced the butter with sesame tahini. This makes the cookies moist but not greasy. It also makes these cookies super fluffy. These cookies are also egg free. Instead of using eggs to bind the batter, we make a "chia egg" by combining chia seeds with water and letting them gel. Lastly, these cookies can be made in one bowl without a mixer. They are so easy to make even a beginner cook can make them.

    What is sesame tahini?

    If you are wondering what is all the hype with tahini, it's time you try this wonderful ingredient. Sesame tahini is a paste made from grinding sesame seeds. It is often found in Mediterranean and Middle Eastern foods like hummus, baba ghanoush, tahini salad, halvah and more. Most people know tahini as a flavor eaten in savory foods but it is equally delicious in sweet foods too. The versatile, slightly nutty and distinct bitterness of tahini makes everything better. Try my Vegan Tahini Coffee Cake or my Tahini Granola, or my favorite Vegan Peach Crumble Cake. I always use Mighty Sesame co. tahini because it is organic, always runny, and has only one ingredient. Tahini makes these tahini chocolate chip cookies really special.

    Ingredients for Tahini Chocolate Chip Cookies

    The ingredients list for these cookies contain all the expected pantry staples that most cookies have. But there are also some good for you ingredients snuck in like oats, chia seeds and sesame tahini. Let's run through the list together and I will offer any substitutes and recommendations.

    • Chia seeds- I love making an egg replacer by combining chia seeds and water. The gel works great as a binder in baking recipes. You can substitute flax seeds for chia.
    • Water- Since this is an egg free and oil-free recipe, water replaces the liquids.
    • Sesame Tahini- I have replaced butter or oil with sesame tahini in this recipe. I like Mighty Sesame Tahini Co best because it is runny and not clumpy.
    • Flour- We use AP flour for these cookies. You can use a gluten free flour with a 1:1 replacement ratio like King Arthur. I have not tested the recipe with almond flour, coconut flour or any other gf flour.
    • Baking soda
    • Salt
    • Oats-For this recipe I use whole oats, not instant oats or quick cook.
    • Brown sugar
    • Granulated sugar
    • Vanilla extract
    • Vegan chocolate chips- I like Enjoy Life brand.

    How to make Tahini Chocolate Chip Cookies

    These vegan cookies are so easy to make. You only need a bowl and a spoon, no mixer or beaters necessary. Here is how to make them.

    • Make the batter- In a large bowl add all the ingredients and mix with a spoon or pastry spatula. Fold the chocolate chips into the batter.
    • Bake the Cookies- Scoop or spoon the cookie batter onto a sheet pan or cookie sheet lined with parchment paper. This recipe makes 12 large cookies. Bake them for about 15 minutes,

    Ingredients
      

    • 1 tbsp chia seeds
    • ½ cup water plus 3 tbsp
    • ½ cup Sesame Tahini
    • 2 cups Flour
    • 1 tsp baking soda
    • ½ tsp salt
    • ½ cup oats
    • ¾ cup brown sugar
    • ¼ cup granulated sugar
    • 2 tsp vanilla extract
    • 6 oz vegan chocolate chips

    Instructions
     

    • Preheat oven to 350
    • Make chia egg by combining chia seeds with 3 tbsp water and let sit while assembling the rest of ingredients. It will gel and make a thick binder for the cookies.
    • In a large bowl, add tahini, brown sugar and granulated sugar and combine
    • To the bowl add baking soda, vanilla extract, salt, chia egg, flour, oats and water and mix well
    • Lastly, fold in the chocolate chips.
    • On a large parchment paper lined baking sheet scoop or spoon the cookie mixture into 12 large cookies, flatten gently with back of the spoon .
    • Cook for 15 minutes for a moist, fluffy and chewy cookie that you will love.
