    If you are a peach lover, you must try this vegan peach crumble cake. As far as breakfast cakes go, this one is a winner. It has a layer of soft, caramelized peaches on the bottom. Then it has a layer of moist cake that will challenge your beliefs about vegan baking. The crumbly top layer is perfection. This vegan coffee cake is the perfect addition to your breakfast or afternoon coffee or tea. Be sure to print the recipe for peach season and make it part of your family tradition.

    There is so much to love about this delicious peach recipe. It's no secret that I absolutely hate baking. If you are in the same cooking camp as me and think baking is a bore then this recipe is for you. This cake recipe is so easy to make even a beginner cook can make it. I don't even use a mixer even though you can. I just pop all the ingredients in a bowl and mix with a spoon. Easy peasy. You will also love how well this recipe showcases fresh peaches. We went peach picking this year and used our seasonal fruits to develop this recipe. It was a huge hit! Another thing you will like about this cake is that it is relatively healthy. There are healthy ingredients peppered in like oats, olive oil, tahini and peaches.

    When should you eat vegan peach crumble cake

    This vegan cake is the perfect thing to eat for breakfast or an afternoon pick me up. I would call this a coffee cake. In fact we ate it with our morning coffees, our afternoon caffeine fix and we even had a piece for dessert. This peach cake was a hit with the whole family. The kids love that crumble topping. To be fair, the adults loved it too. Make sure to make this cake when peaches are at their best. End of Summer and beginning of Fall is when peaches are their sweetest and most abundant. Mark your calendar because you don't want to miss making this cake. Don't let another peach season pass by without making this cake!

    Ingredients for vegan peach crumble cake

    This cake recipe is mostly just pantry staples. These ingredients are basic. let's go down the list.

    • Peaches- Peaches or nectarines are what make this cake really special. The way they caramelize on the bottom is incredibly delicious.
    • Organic Sugar- I use organic sugar to sweeten this cake. It is sweet without being over the top, hurt your teeth sugary.
    • All Purpose Flour- Feel free to sub Gluten Free Flour. I like King Arthur brand.
    • Unsweetened Plant Milk- Any type works like almond, soy, cashew, oat milk or even coconut. Just make sure it is unsweetened.
    • Unsweetened Apple Sauce- Apple sauce gives this cake a great moist texture.
    • Tahini- Tahini also contributes to this cakes texture. It also has a nice balancing flavor.
    • Vanilla- Peaches and vanilla are a match made in heaven.
    • Baking Soda and salt- The usual unsung heroes of baking.
    • Vegan Butter- I love vegan butter. It melts like a dream and is easy to swap out in baking recipes.
    • Brown Sugar- Brown sugar just hits different in a crumble topping. You can use white if you prefer but brown is perfect.
    • Oats- Oats give the crumble topping more texture, flavor and they look pretty!

    How to make Vegan Peach Crumble

    This recipe is so easy. Give the printed recipe to your teenager, I bet they can do it!

    • Preheat the oven- Get the oven ready to do it's job!
    • Cut the peaches- I like them bite sized.
    • Make the cake- This is one of the easiest cakes you will ever make. Just put the ingredients in a bowl and mix!
    • Make the crumble- Add oats, flour, brown sugar and salt to a bowl. Pour melted butter and mix well.
    • Assemble- Layer the peaches, cake batter and crumble topping in an oven safe baking pan.
    • Bake- Cook until golden, fragrant and delicious.

    Vegan Peach Crumble Cake

    This legendary vegan peach crumble cake will blow your mind. The 3 part recipe is so easy to make that even someone who hates to bake can make it. The cake is so moist you won't believe it is vegan. This is the way to enjoy the bounty of peaches in late summer and early Fall.

    Ingredients
      

    For Peaches

    • 4 peaches large, pitted and cut in bite sized pieces.
    • 1 tbsp organic sugar

    For Cake

    • 3 cups AP Flour
    • 2 cups unsweetened plant milk
    • 1 ½ cups organic sugar
    • ½ cup unsweetened apple sauce
    • ¼ cup olive oil
    • 2 tbsp tahini
    • 1 tbsp vanilla
    • 1 tsp salt
    • 1 tsp baking soda

    Crumble Topping

    • 8 tbsp vegan butter melted
    • ¾ cup brown sugar
    • ¾ cup flour
    • ½ cup oats

    Instructions
     

    • Preheat oven to 350

    Make Cake

    • Combine all liquid ingredients (plant milk, olive oil, apple sauce, tahini, vanilla) plus salt and baking soda in a bowl and mix well by hand or using beaters at slow speed
    • Add flour and sugar and mix with a large spoon or with beaters running on slow and mix until batter forms. Put aside until assembly.

    Crumble Topping

    • Combine melted vegan butter, sugar, oats, and flour until a crumbly dough forms.

    Assemble the cake

    • In a large oiled baking pan make bottom layer with the peaches. Then pour over the cake batter over the peaches. Then top with crumble topping.
    • Bake for 35 -40 minutes. Check at 35 minutes by inserting a toothpick in the center. If the toothpick or skewer is clean when removing then it is done. If batter clings to the skewer keep cooking in 5 minute increments.
