My normal method of soup and sauce making goes like this: sauté aromatics in oil until fragrant and golden, add celery and carrots and sauté until tender and then add the bigger ingredients, season and add water. Then cook until fortified and fork tender This strategy produced the best soup bases, with depth and flavor galore. With Mala Girl broths, we can simplify. Rather than a lengthy sauté, just add water and Mala Girl. Then cook until fork tender. The flavors are quite impressive and healthful. By using the simplified method, you are now able to cook oil-free!
First I tried the Soulful Classic which is Mala Girl's version of "chicken" broth. Of course theirs is vegan which makes it tastier and more palateable. This broth is incredibly versatile, ideal for Chickpea Noodle soup, Ramen broths, and Stews whose recipes often call for chicken broth or bouillon. The ingredient list is simple yet impressive including: celery, onion, yeast flakes, dulse, sea salt, cacao butter, lemon, ginger, herbs and spices. I love the Mediterranean vibe! It works so well in my Classic Rice Pilaf Recipe
Then I tried the Mushroom Brainiac, Mala's Vegan "beef" broth. It's so good in the Best Vegan Mushroom Gravy. This vegan broth contains cacao powder, superfood mushrooms like reishi, lions mane and porcini, plus herbs and spices. This one is perfectly umami plus gives a brain boost with those adaptogenic mushrooms! I also used it for my Butternut,Bean and Kale Stew where it really shines!
Next I tried Cosmic Curry! Wow, this one blew me away with it's flavor. This vegan broth contains curry spices, cacao butter, himalayan sea salt, ashwagandha, lemon, onion, celery, nutritional yeast, dulse, herbs and spices. It was perfect for my Curry Eggplant and Potato Stew.
I really enjoyed the Fireball Basil, Miracle Moringa and the Mystic Maca blends also. The flavors are so original, so flavorful and so versatile. They are all great for sipping on a chilly day or for using to create comforting soups, stews and gravies. Deeply warming for both the body and spirit, Mala Girl is definitely this foodies savory soulmate. This is why I have deemed Mala Girl Broths the best soup base.
