What are Patatas Bravas?
Patatas Bravas are a tapas favorite from Spain. Translated, papatas bravas means spicy potatoes. Potato chunks are fried in oil, then tossed in a spicy and tangy sauce made from tomatoes, onions, garlic, vinegar and sweet and hot paprika. Then they are drizzled or dipped in a tangy aioli. This recipe is for easy patatas bravas sauce.

This recipe for bravas sauce is so easy that any beginner can make it successfully. There is no chopping required, no tedious sautéing or browning of onions or garlic, there is just an extremely simple cook. Although the ingredients are dimmed down, the flavor is not! This easy patatas bravas sauce has all the components of a traditional bravas sauce so it still tastes fantastic.
Ingredients
- olive oil
- onion powder
- garlic powder
- smoked paprika
- hot smoked paprika
- tomato paste
- water
- white vinegar
- salt
Instructions for Easy Patatas Bravas Sauce
- In a deep skillet over medium heat, add olive oil to warm. Then add smoked paprika and hot smoked paprika to the oil and cook for 1-2 minutes
- Then add tomato paste and stir often cooking for 3-4 minutes while you watch the color darken slightly from the caramelization
- Add water, garlic powder, onion powder, salt and vinegar and bring to a boil stirring constantly.
- Turn down to simmer for 10 minutes and stir occasionally while the sauce thickens.
- Serve with Easy Air-fried Patatas Bravas

- 1 tbsp hot smoked paprika
- 4 tbsp tomato paste
- 2 cups water
- 1 tbsp white vinegar
- 1 tsp salt plus more to taste

Yummmm what a flavor powerhouse. I love that your version is all about the spices rather than being weighed down by a bunch of mayo, which I think (???) is how we mostly saw them in Spain.

Made this sauce tonight, absolutely awful, authentic Bravas sauce needs more than just a concoction of spices and should have onion and tomatoes involved, much better recipes elsewhere.

Made it tonight minus the onion powder as couldn't get any!!! Could do with some basic measures for ingredients but I improvised and to be fair this turned out very similar t the authentic sauce served in Spain. Loved it!!!
