This legendary vegan peach crumble cake will blow your mind. The 3 part recipe is so easy to make that even someone who hates to bake can make it. The cake is so moist you won't believe it is vegan. This is the way to enjoy the bounty of peaches in late summer and early Fall.
4peacheslarge, pitted and cut in bite sized pieces.
1tbsporganic sugar
For Cake
3cupsAP Flour
2cupsunsweetened plant milk
1 ½cupsorganic sugar
½cupunsweetened apple sauce
¼cupolive oil
2tbsptahini
1tbspvanilla
1tspsalt
1tspbaking soda
Crumble Topping
8tbspvegan butter melted
¾cupbrown sugar
¾cupflour
½cupoats
Instructions
Preheat oven to 350
Make Cake
Combine all liquid ingredients (plant milk, olive oil, apple sauce, tahini, vanilla) plus salt and baking soda in a bowl and mix well by hand or using beaters at slow speed
Add flour and sugar and mix with a large spoon or with beaters running on slow and mix until batter forms. Put aside until assembly.
Crumble Topping
Combine melted vegan butter, sugar, oats, and flour until a crumbly dough forms.
Assemble the cake
In a large oiled baking pan make bottom layer with the peaches. Then pour over the cake batter over the peaches. Then top with crumble topping.
Bake for 35 -40 minutes. Check at 35 minutes by inserting a toothpick in the center. If the toothpick or skewer is clean when removing then it is done. If batter clings to the skewer keep cooking in 5 minute increments.
