Ingredients
For Peaches
- 4 peaches large, pitted and cut in bite sized pieces.
- 1 tbsp organic sugar
For Cake
- 3 cups AP Flour
- 2 cups unsweetened plant milk
- 1 ½ cups organic sugar
- ½ cup unsweetened apple sauce
- ¼ cup olive oil
- 2 tbsp tahini
- 1 tbsp vanilla
- 1 tsp salt
- 1 tsp baking soda
Crumble Topping
- 8 tbsp vegan butter melted
- ¾ cup brown sugar
- ¾ cup flour
- ½ cup oats
Instructions
- Preheat oven to 350
Make Cake
- Combine all liquid ingredients (plant milk, olive oil, apple sauce, tahini, vanilla) plus salt and baking soda in a bowl and mix well by hand or using beaters at slow speed
- Add flour and sugar and mix with a large spoon or with beaters running on slow and mix until batter forms. Put aside until assembly.
Crumble Topping
- Combine melted vegan butter, sugar, oats, and flour until a crumbly dough forms.
Assemble the cake
- In a large oiled baking pan make bottom layer with the peaches. Then pour over the cake batter over the peaches. Then top with crumble topping.
- Bake for 35 -40 minutes. Check at 35 minutes by inserting a toothpick in the center. If the toothpick or skewer is clean when removing then it is done. If batter clings to the skewer keep cooking in 5 minute increments.
