Kale is one of the most essential greens in any vegan kitchen. It's hardy, usually pretty inexpensive, and works amazingly well in salads, soups, pasta, and way more. If you haven't tried growing kale before, you'll be pleasantly surprised. Even an inexperienced home gardener can grow kale, and those little kale trees will feed you all year long!
Not into growing your own? It's a staple at all farmers markets and is easy to buy in most grocery stores, too.
Kale is a powerhouse for vegans
Sure, kale is convenient and affordable, but is it actually good for you? Yes! Here are the nuts and bolts:
- Kale is densely packed with nutrients, including vitamins A, C, and K
- That dark green color comes from antioxidants, which can be anti-inflammatory and potentially even anti-cancer
- Kale contains a lot of fiber, which helps keep you full and support healthy digestion
- It's low in calories, so you get the nutrients and fiber without a huge caloric impact
This is just the start, too. There are so many ways to prepare kale, whether it's massaged in salads, sauteed for a scramble, blended into green smoothies, baked into kale chips, or added to soups.
It's one of the most versatile ingredients of all time, and deserves way more love. Just sayin'.
Chef's Tip: There are lots of different types of kale to try, like lacinato kale, Red Russian, curly kale, and many more. If you're not a fan of one, try another. I bet you'll find at least one type of kale you enjoy.
Pro Tips for Converting Kale Haters
I get it - not everyone is a fan of the green giant.
After consuming and serving many, many bunches of kale in my life, these are my go-to strategies to convert even the most reluctant eaters.
- Remove the thick stems. Kale has thick, woody stems that are hard to eat. The texture is much more pleasant without them
- Give kale a massage! It sounds funny but aren’t we all nicer after a massage?
- Dress your kale with a tasty dressings. Salad sauce is everything!
- Chop kale very small to make it easier to eat and combine with other veggies that you love. That way if its not your fave, it’s kinda camouflaged.
Vegan Kale Salad Recipes
Let's start with the most common type of kale recipes to help you add some more fiber and flavor to your meals. Kale salads are truly the BEST for meal prep since they can sit in the dressing for so long, and they feel much more substantial than regular salads.
Why do you need to massage kale?
One of the most common ways to consume kale is to add it to salads, right? It's a green, and green foods go in salads...
However, kale has a thick texture that can require quite a bit of chewing when not massaged. It's not like regular salad that you slice and eat - you need to give it a bit of a workout.
Massaging kale is simple - you basically wash and slice your kale, then add extra virgin olive oil, a pinch of salt, and maybe a little lemon juice, although the actual ingredients are optional.
Rub and massage the seasonings into the kale and you'll notice how the leaves begin to soften under your hands.
This process manually breaks down some of the fibers in the leaves to make them softer and more pliable.
It actually also releases some of the flavor in the kale, bringing out more of a fresh flavor and removing some of the naturally bitter taste.
This makes it way easier to eat and enjoy, so yes, it is a necessary step for pretty much all kale salads!
