This easy power bowl is the perfect easy dinner. It is full of veggies and plant-based protein and it tastes amazing. The real kicker here is that it comes together in about 20 minutes and uses just one skillet. This is truly one of the easiest recipes on my blog and also one of my favorites. I return to this easy recipe time and time again because as a busy, working Mother of 3, I struggle to keep myself nourished when I am always on the go. This recipe is great for meal prep also but tbh, this is the one I make when I don't know what to eat and I need a quick cook.

This easy vegan recipe has the perfect balance of ingredients to keep you full for hours. It is packed full of fibrous, cruciferous veggies, chickpeas and quinoa for carbs and plant-based protein, superfoods like kale and avocado plus a drizzle of vegan yogurt for some probiotics.
Ingredients for Easy Power Bowl
- cauliflower
- brussels sprouts
- olive oil
- shredded kale
- quinoa
- chickpeas
- salt
- pepper
- garlic powder
- avocado
- chile lime season or tajin
- vegan yogurt
- hot sauce
How to Make Easy Power Bowl
- In a large deep skillet or wok over medium heat, add oil then fry the cauliflower and brussels sprouts for 7 minutes stirring every 2-3 minutes. Season with salt, pepper and garlic powder.
- Add kale, chickpeas, quinoa and water. Cover and cook for five minutes without stirring.
- Uncover and stir. Taste for salt and adjust if desired.
- Serve with chile dusted avocado, drizzled vegan yogurt and hot sauce.

- 1 TSP chile lime season or tajin
- 3 tbsp vegan yogurt to drizzle
- 3 TSP hot sauce OPTIONAL
Instructions
