The best soba noodle salad recipe
This soba noodle salad is bursting with flavor! It is sweet, tangy and spicy and full of crunch. The bulk of this salad is raw vegetables which makes it filling and full of vitamins. This soba salad has gochujang and maple tofu for protein but you can use any of your favorite protein sources to make this a complete balanced meal.
What is Gochujang?
Gochujang, is a Korean red chili paste. It is made from grinding red chilis, fermented soybeans, rice and salt. It is sweet, spicy, tangy and has a umami flavor that is hard to describe. An essential ingredient in Korean BBQ sauce, it is perfect for this sweet and spicy Gochujang and Maple Tofu.
What goes with soba noodle salad?
This salad was developed to go with the Gochujang and maple tofu that is pictured. I decided to make it two recipes because some people wanted the noodles without tofu and others wanted the tofu sans noodles. Therefore two recipes were born! For me the tofu is the perfect accompaniment but other proteins that would be delicious are edamame, chickpeas or tempeh. You could even sub in animal proteins if that is your preference. Ingredients for Soba Noodle Salad
This salad has some more exotic and harder to find ingredients than many of my recipes. Most Whole Foods or Wegmans will have sesame oil, gochujang and rice vinegar available. How to Make Soba Noodle Salad
This salad is so easy to make! Simply chop all the ingredients and mix with the liquids. It will be yours in a flash.
- In a large bowl add sesame oil, gochujang, maple syrup, rice vinegar and soy sauce and mix until combined and smooth.
- Add shredded cabbage, cucumbers, noodles, carrots and bell peppers and mix until coated well.
- Top with sesame seeds and add Gochujang and Maple Tofu.

Ingredients
For Salad
- 1 9.5 oz package soba noodles, cooked, rinsed, and drained
- 3 persian cucumbers sliced crinkle cut
- 2 large carrots sliced long, thin and crinkle cut
- 3 baby bell peppers seeded and sliced thin
- ½ head or 2 cups red cabbage shredded
- 4 tsp sesame seeds
- 1 tsp toasted sesame oil
- 1 tbsp gochujang
- 2 tsp maple syrup
- 2 tsp rice vinegar
- 1 tsp soy sauce
Instructions
For Salad
- In a large bowl add sesame oil, gochujang, maple syrup, rice vinegar and soy sauce and mix until combined and smooth.
- Add shredded cabbage, cucumbers, noodles, carrots and bell peppers and mix until coated well.
- Top with sesame seeds and add your favorite protein.
