I've been working on sharing all of my favorite homemade dressings and certainly can't skip this one!
The combination of fresh dill weed, sharp white vinegar, Dijon mustard, and maple syrup is extra special. It's bright enough to wake up any salad and is especially lovely served over grilled veggies, steamed green beans, roasted potatoes, and more.
I actually use it in one of my all-time favorite salads, this Dill Pickle Potato Salad, for that briny, aromatic flavor. If you're obsessed with dill and love bold flavors, you will not regret it.

Apart from the fresh herbs, this dressing basically relies on pantry staples. It's easy enough to whip together at the last minute yet truly tastes gourmet. It'll quickly become the star of the show and make any dish a little more exciting.
- Fresh herbs - Load up on lots of fresh dill and green onions. You can also use fresh chives for a milder onion flavor.
- White vinegar - White vinegar is one of the sharpest vinegars out there and may seem like it'd be too harsh, but never fear. The maple syrup and Dijon help mellow it out just enough and you need that punchy, tangy taste to perk up hearty roasted potatoes and cooked grains.
- Extra virgin olive oil - To help balance out the sharpness of the dressing and make the dressing more filling. You can use any neutral oil you like, like avocado oil or even vegetable oil.
- Dijon mustard - To emulsify the dressing and add extra depth of flavor.
- Pure maple syrup - For just enough sweetness to keep the vinegar from being too tangy.

How to Make Dill Salad Dressing
Although you can blend this dressing in a blender or food processor, I prefer to leave the pieces of chopped herbs. They add a nice texture and look like a gorgeous garnish when drizzled over your salad greens or favorite summer veggies.
- To a small bowl or jar add vinegar, olive oil, mustard, maple, and salt. Whisk until well combined. Then add the dill and green onions and mix well.
Storing Suggestions
Store any leftover dressing in an airtight container or mason jar in the fridge for 3-4 days. The oil may solidify in the fridge, but let it rest at room temperature to thaw and soften. Whisk or shake to mix well before serving.

Tips for Making the Best Dill Dressing
- Sweeten to taste. For a sweeter dressing, add a little extra maple syrup.
- Use your favorite vinegar. White vinegar is key for that classic pickle-like flavor, but you can adjust it, if needed. White wine vinegar would be a great swap, although you can also try fresh lemon juice or even apple cider vinegar.
- Let it rest. The longer the dressing rests, the more the flavors start to merge together. I like to let it rest for at least 30 minutes before serving whenever possible.
- Make a creamy dressing. Fold in some vegan Greek yogurt or dairy-free sour cream for a thicker creamy dill salad dressing.
- Make it savory. Feel free to play up the savory flavors by adding a few more seasonings, like freshly ground black pepper, garlic powder, onion powder, and red pepper flakes. You can also add fresh garlic if you really love sharp, savory flavors.

If you really want to make this dressing taste like pickles, replace part of the vinegar with pickle brine. Just be aware - it'll taste really pickle-y!

If you're into dill pickles, it will give you a similar flavor profile, but in a more sophisticated way. It's the perfect balance between understated while still being incredibly bright and flavorful.
