    This vegan Balsamic Strawberry and Feta Salad checks all the flavor boxes. It is sweet, tangy, umami, salty and zippy. If you think balsamic strawberries sound weird, you are in for a sweet surprise! The tangy balsamic vinegar makes the strawberry's sweetness pop. The salty feta cheese adds a nice umami layer that compliments the tartness of the lemon and the fresh pop of mint. Thinly sliced red onion gives just the right amount of spiciness to really round out the fantastic flavor profile.

    Why you will love this Balsamic Strawberry Salad

    This summery salad is incredibly flavorful. There is so much to love! First, this is a no-cook recipe which makes it perfect for summer nights! It is full of garden fresh and good for you ingredients that are abundant in warmer months. The combo of strawberries, red onion and balsamic vinegar is one of the best out there. The flavors are incredibly balanced. Not to mention this salad is breathtaking! There is so much vibrant color between the strawberries, cabbage, avocados and onions. This recipe is the perfect girls night dinner on the deck with a glass of vino!

    What is Vegan Feta

    Vegan feta cheese is a non-dairy cheese substitute that mimics the taste and texture of feta. I have tried many vegan feta cheeses over the years and found them unsatisfactory in both taste and texture. But this one by Follow Your Heart blew my mind. It really nails the flavor and feels alot like the real deal. That is why it is my preferred vegan feta for this balsamic strawberry and feta salad.

    Ingredients

    These ingredients scream summer! But luckily most of them are available year round at most markets. This is what you need to make the best summery salad ever!

    • Persian cucumbers
    • strawberries
    • bagged pre-washed baby spinach
    • red onion
    • red cabbage shredded
    • fresh mint leaves
    • balsamic vinegar
    • lemon
    •  salt
    • fresh ground black pepper
    • extra virgin olive oil
    • vegan feta (or regular)
    • avocado

    How to make a Balsamic Strawberry and Feta Salad

    This recipe is quick and easy to execute. It can be ready in 10 minutes if you are a quick chopper. The presentation is a show-stopper.

    • Chop cucumber, slice onion, shred cabbage, and julienne mint.
    • Add to large mixing bowl with baby spinach.
    • Drizzle balsamic vinegar, lemon, olive oil, salt and pepper then mix with hands or tongs. 
    • Top with chopped avocado, feta and more black pepper. 
    • Serve immediately.

      So when do you add the strawberries as it is not mentioned in the method!?
