    Lemon and poppyseed are a true match made in heaven, especially when paired together in this homemade vegan poppyseed dressing. It uses just 5 simple ingredients and has the freshest, creamiest, brightest flavor ever. You get that mouth-puckering brightness from the fresh lemon juice, but it's all mellowed out by the creamy yogurt and sweet maple syrup. Drizzle it over all your favorite fresh fruit salads and feel good from the inside out.

    Finding good creamy vegan dressings at the grocery store can be tricky.

    They're usually loaded with tons of oils, super expensive, and packed with highly processed emulsifiers and stabilizers to compensate for the lack of dairy. 

    That's part of why I wanted to share this series of vegan salad dressings - to prove just how quick and easy it is to whip up restaurant-quality dressings at home in literal moments. 

    And this vegan poppy seed dressing? One of the best. It's got that sweet, creamy, lemony flavor you know and love, and it really brings out the best in the Blueberry Lemon Poppyseed Salad and so much more.

    Ingredients for Lemon Poppyseed Dressing

    There are lots of different poppyseed dressing recipes out there, including some traditional vinaigrettes and other creamy versions. Most of those rely on a lot of oil, whether that's actual liquid oil or vegan mayo. I love using vegan yogurt for creaminess in my salad dressings because you still get that luscious texture, but without any added oil. Give it a try and see what you think!

    • Plain vegan yogurt - This is where the creaminess comes from. Use whichever unsweetened, plain vegan yogurt you prefer.
    • Lemon juice - Fresh lemon juice is definitely best! You can use lemon juice concentrate, but the flavor won't be quite the same. You can also grate the lemon zest for even more zing.
    • Poppy seeds - These have a slightly nutty, floral flavor that works so well with lemon. 
    • Pure maple syrup - Adds just the right touch of sweetness and extra depth. 
    • Sea salt and black pepper - To bring everything together and add a subtle savory note.

    How to Make Vegan Poppyseed Dressing

    • To a small bowl or mason jar, add yogurt, lemon, poppyseeds, pure maple, salt and pepper. 
    • Whisk until well combined.

    Storing Suggestions

    Store any leftover dressing in an airtight container in the fridge and enjoy within 5 days for best quality. If the dressing begins to separate, simply whisk it together again before serving.

    Tips for Making the Best Poppy Seed Salad Dressing

    • Whisk, don't blend. Although I often love blending my homemade dressings for an ultra-creamy texture, blending can break apart the poppyseeds. Whisking keeps everything just right.
    • Season to taste. This recipe is balanced as-is, but if want more of a savory flavor, try adding a dash of onion powder or a tiny spoonful of Dijon mustard. They'll add a little bit of a kick.

    How to Serve

    Lemon and poppyseed are incredible with fruit salads, whether that's an actual chopped fruit salad or green salads with fresh berries or fruits.

    Do you have to use yogurt?

    Many creamy dressing recipes rely on dairy, like Greek yogurt or sour cream. I find that vegan yogurt gets the closest texture and flavor without having to go out of your way to find any specialty ingredients. You could also use a little vegan mayo, which add even more of a tangy flavor.
