    The best savory recipe for figs

    This fig radicchio & hazelnut salad is to die for! The combination of sweet figs, bitter radicchio and buttery avocado is next level. Add in crunchy hazelnuts, heirloom tomatoes and fresh mint and this is a salad legends are made of. This is the kind of salad you pay big bucks for in wine country or at a fancy restaurant. Make it at home for a fraction of the cost and eat like a king. Fancy salads are my bread and butter and this is one of the best.

    What is radicchio?

    Radicchio is a member of the chicory family. It looks similar to a small red cabbage but the leaves are more tender. Radicchio is known for it's bitter, slightly spicy flavor and gorgeous color. It also happens to be one of my absolute favorite vegetables. The flavor and texture is so distinct and it brings any salads eye appeal to the next level. It goes really well with a sweet and tangy balsamic dressing like this one. Radicchio is also delicious sautéed or grilled. It really ties together the flavor profile of this fig, radicchio & hazelnut salad.

    Ingredients for fig radicchio & hazelnut salad

    This is one of my fanciest and most boutique of salad recipes. I originally developed it when working with Wild Groves Olive gourmet oils. They had provided me with fig infused balsamic vinegar and meyer lemon infused olive oil. I have reworked it to make the ingredients easier to find with the same delicious results by using balsamic vinegar, olive oil, sweetener and lemon as the dressing. This is the ultimate summer salad recipe for fig and heirloom tomato season.

    • fresh figs
    • radicchio
    • avocado
    • heirloom tomatoes
    • cherry tomatoes
    • toasted hazelnuts
    • fresh mint
    • balsamic vinegar
    • olive oil
    • Meyer lemon
    • salt and pepper
    • pure maple syrup or agave

    How to make this beautiful salad

    This salad is not a great one for meal prep. It needs to be eaten fresh and immediately after mixing. All the gorgeous ingredients will begin to degrade quickly. That being said it's a quick chop and mix kind of recipe that makes it great for even a beginner cook. It will make you look like an incredible chef despite its simplicity.

    • Put all ingredients in a bowl (except the sliced avocado, that's for garnish on top) and mix thoroughly.
    • Devour with abandon.

    Ingredients
      

    • 6 figs sliced
    • 1 head radicchio rustic chop
    • ½ avocado diced
    • ½ avocado sliced
    • 2 large heirloom tomatoes sliced
    • 1 cup cherry tomatoes halved
    • ½ cup toasted hazelnuts
    • 2 tbsp fresh mint chopped
    • 1 tbsp balsamic vinegar
    • 1 tbsp olive oil
    • 1 pinch salt and pepper
    • 1 Meyer lemon squeezed
    • 1 tsp maple syrup or agave

    Instructions
     

    • In a large bowl add radicchio, figs, tomatoes, hazelnuts, diced avocados and mint.
    • Drizzle with balsamic vinegar, olive oil, lemon and maple syrup. Sprinkle with salt and pepper. Mix well with clean hands. Top with sliced avocado.
