    Beans and Broccoli Rabe Pasta

    This Beans and Broccoli Rabe pasta recipe is so simple and so delicious. It features white beans, corn, peppers and broccoli rabe. This is an easy way to eat your beans and greens. Not only is this a quick and easy recipe, it is super nutritious and full of fiber. This pasta recipe is just a quick chop, sauce and mix. These kinds of easy dinners are perfect for busy families like mine and can be easily customized to everyone's tastes.

    What is Broccoli Rabe?

    Broccoli Rabe, is a green vegetable which looks like leafy broccoli. Although it resembles small broccoli florets, it is actually closely related to turnip. Broccoli rabe is also known as Rapini and is a cruciferous vegetable that tastes like mustard greens or turnip greens. The slightly bitter and distinct flavor goes incredibly well with garlic and tastes amazing sautéed or roasted. It is a wonderful ingredient for pasta dishes and pizzas. It is the star in this beans and broccoli rabe pasta dish.

    Ingredients for beans and broccoli rabe pasta

    The ingredients for this easy vegan pasta dish are fairly basic. Most are pantry ingredients that we all have on hand. The only "specialty" item is the broccoli rabe itself which can be easily substituted with any cruciferous veggie or green if its unavailable.

    • farfalle
    • extra virgin olive oil
    • red onion
    • broccoli rabe
    • garlic
    • yellow baby bell peppers
    • frozen corn
    • white beans
    • salt and pepper
    • water
    • red pepper flakes, vegan parmesan or nutritional yeast for garnish

    How to make beans and broccoli rabe pasta

    I cannot stress enough how quick and easy this recipe is. In a few simple steps this dinner can be yours in about 30 minutes!

    • Put on water to boil and cook pasta simultaneously while cooking “sauce”.
    • In a deep sauté pan, Heat oil on medium and cook garlic and onions until toasty and fragrant about 5 mins stirring often.
    • Add bell peppers and cook for 3-4 mins.
    • Add broccoli rabe, beans, and corn, season with a sprinkle of salt and pepper, add water and cover for 3-4 minutes.
    • Toss cooked pasta with the veggies and taste for salt. Adjust to your preferences and garnish with crushed red pepper, vegan parm or nooch.

    Ingredients
      

    • 1 pound farfalle
    • 1 tbsp extra virgin olive oil
    • ¼ red onion cut in strips
    • 1 bunch broccoli rabe washed and rustic chop
    • 4 cloves garlic minced
    • 3 yellow baby bell peppers chopped chopped
    • 1 cup frozen corn
    • 15 oz white beans can, drained
    • 1 ea salt and pepper to taste
    • 3 tbsp water
    • red pepper flakes, vegan parmesan or nutritional yeast for garnish
