High Protein Vegan Tofu Caesar Dressing

This clever tofu Caesar dressing has a similar bold and sharp flavor just like traditional Caesar dressing, but is made with a secret ingredient: silken tofu. This special type of tofu blends up rich and creamy every time. Add in some oil, hemp hearts, Dijon mustard, capers, and good ol' nooch for a slightly cheesy, vibrant flavor you will not believe is vegan.

Ingredients
  

  • 1 package silken tofu 16-oz
  • 4 tbsp extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 lemon juiced
  • 4 tbsp nutritional yeast
  • 4 tbsp hemp seeds or hearts
  • 1 teaspoon capers
  • ¼ teaspoon salt
  • Black pepper to taste

Instructions
 

  • To a high speed blender add tofu, oil, mustard, lemon juice, nutritional yeast, hemp seeds, capers, salt and black pepper. Blend until smooth and creamy.
  • Enjoy within 4-5 days for the best quality.
