This white bean and orzo salad is a delicious and satisfying dish for any occasion. It is chock full of tender roasted veggies and it has a a sweet and tangy tomato and red pepper vinaigrette dressing that is to die for. 2 roasted baby bell peppers(from roasting step not in addition to)

Instructions
Preheat oven to 400
On a sheet pan place cauliflower, radishes, bell peppers and tomatoes, spray with oil, season with salt and pepper and bake for 20 minutes turning once halfway
Cook orzo according to package and set aside
Chop other ingredients: cucumbers, tomatoes, herbs and put in a large bowl
Make dressing by combining oil, vinegar, pure maple, salt and the roasted tomatoes and bell peppers from roasting step.
Chop the extra peppers and add to the salad bowl along with the orzo, roasted cauliflower, beans and radishes and the dressing. Mix well.
Cool completely before covering tightly and storing in the refrigerator. Enjoy for up to 4 days for best quality
