This nut free vegan Caesar salad is a thing of wonder. The super creamy caesar dressing is made by blending white beans with all the usual suspects. Who knew that beans blended with olive oil, lemon, and a handful of other easy to find ingredients could make a dressing that tastes like caesar! The bulk of the salad is made with hardy kale, and crispy cajun tofu dressed in the creamy nut-free vegan dressing. It's to die for!

3Tbsp Hemp seeds Optional, adds protein and texture
Crispy Tofu
16 ozExtra firm tofuCut into small cubes
2SpraysOlive oil
1PinchSalt
1Tbsp Cajun seasoning
½Tsp Smoked paprika
Dressing
15ozWhite beanscan, rinsed and drained
4TbspOlive oil extra virgin
½ TspSalt
1 Tsp Dijon mustard
1Large lemonSqueezed
1clovegarlic
1PinchDulse flakesOptional
4Tbsp Nutritional yeast
Black pepperTo your tastes
Instructions
Preheat oven to 400. On a sheet pan add tofu, olive oil, salt, smoked paprika and cajun spice. Mix well and bake for 20 minutes, turning once halfway. Let cool.
Make dressing by putting white beans, olive oil, salt, lemon juice, dijon mustard, garlic, salt, black pepper , nutritional yeast and optional dulse flakes in a blender and blend until smooth.
In a large bowl, add the kale and half the dressing and massage to soften the leaves. Add the tofu and the remaining dressing and toss well.
