Fresh summery side salad of crisp and refreshing greens, cucumbers and radishes. It features garden fresh produce, oven crisped pita bread, and a light and flavorful lemon, olive oil and sumac dressing. This recipe is easy to make and is a perfect refreshing summer salad

Ingredients
  

  • 4 cups spring mix
  • 2 Belgian endives quartered
  • 5 persian cucumbers sliced thin on mandoline or chopped small
  • 4 radishes sliced thin on mandoline or chopped small
  • 10 cherry tomatoes halved
  • 2 mini pita breads
  • 1 tsp olive oil
  • 1 pinch sumac
  • 1 pinch salt
  • 1 pinch garlic salt
  • 2 lemons

Instructions
 

  • Preheat the oven to 400 degrees farenheit
  • Place mini pita breads on a sheet pan. Brush or drizzle with olive oil and then season with salt and garlic salt. Bake for 3-5 minutes until crispy yet pliable.
  • Let the pitas cool then rip then into bite sized pieces with your hands.
  • Layer all ingredients in a large bowl attractively on top of the greens, drizzle with olive oil, squeeze lemons then garnish with salt and sumac
  • Consume immediately
