Soba Noodle Salad
This easy and quick soba noodle salad is full of flavor. The tangy, sweet and spicy dressing makes all the flavor pop!

For Salad
- 1 9.5 oz package soba noodles, cooked, rinsed, and drained
- 3 persian cucumbers sliced crinkle cut
- 2 large carrots sliced long, thin and crinkle cut
- 3 baby bell peppers seeded and sliced thin
- ½ head or 2 cups red cabbage shredded
- 4 tsp sesame seeds
- 1 tsp toasted sesame oil
- 1 tbsp gochujang
- 2 tsp maple syrup
- 2 tsp rice vinegar
- 1 tsp soy sauce
For Salad
In a large bowl add sesame oil, gochujang, maple syrup, rice vinegar and soy sauce and mix until combined and smooth.
Add shredded cabbage, cucumbers, noodles, carrots and bell peppers and mix until coated well.
Top with sesame seeds and add your favorite protein.
