Soba Noodle Salad

This easy and quick soba noodle salad is full of flavor. The tangy, sweet and spicy dressing makes all the flavor pop!

Ingredients
  

For Salad

  • 1 9.5 oz package soba noodles, cooked, rinsed, and drained
  • 3 persian cucumbers sliced crinkle cut
  • 2 large carrots sliced long, thin and crinkle cut
  • 3 baby bell peppers seeded and sliced thin
  • ½ head or 2 cups red cabbage shredded
  • 4 tsp sesame seeds
  • 1 tsp toasted sesame oil
  • 1 tbsp gochujang
  • 2 tsp maple syrup
  • 2 tsp rice vinegar
  • 1 tsp soy sauce

Instructions
 

For Salad

  • In a large bowl add sesame oil, gochujang, maple syrup, rice vinegar and soy sauce and mix until combined and smooth.
  • Add shredded cabbage, cucumbers, noodles, carrots and bell peppers and mix until coated well.
  • Top with sesame seeds and add your favorite protein.
