Cilantro and Lime Hummus
Since the fam was eating pizza for lunch and that is not on my current “diet” I threw together this quick, tasty and relatively healthy meal. If my fridge was fuller I prob would have omitted that bagel and added more veggies to dip but whatevs. The hummus took literally 5 minutes to make.
1 can organic chickpeas drained and rinsed
2 small cloves raw garlic
1T organic Tahini
1 Lime squeezed
2T extra virgin olive oil
1 pinch crushed red pepper
sea salt to taste
small handfull cilantro washed
I do not have a food processor at the moment so I threw it in the blender. Blend it until you can watch the mixture churning slowly like water going down a drain. Top with a few whole chickpeas, olive oil and a cilantro leaf.
This was surprisingly good. I went with the lime because I was out of lemons…To be a great cook you must be flexible.
